You're forgetting (says the guy who eschews religion) that the whole point of the Garden was that *God* planted it and man didn't need to do anything.  It was only after he got evicted that he was told that henceforth only through the sweat of his brow would be bring forth groceries.  This is why Adam had time to do the job: he didn't have to work for a living.  Once THAT became necessary, there was no way we'd have enough time to complete the task.
