Hi Jen!
For younger students and/or beginners using speech-to-text, I would suggest
starting with the built-in dictation features in iOS along with the Notes
app that comes preloaded on the iPad. You can do punctuation and paragraph
formatting in this as well and with newer versions of the iPad it doesn't
even need to be connected to the internet for dictation to work. Here's
