Is not the application of the name important? The string of letters outside the context of a circumscription if often very imprecise - perhaps circumscription is more important than the placement of the epithet in a particular genus. And correct me if I'm wrong, isn't the application of names determined through the type method? So, link types and we appear to have solved the aversion to name changes that Rod objects to and suggests we abandon.
Just a thought or three ...

The traditional way to cite the original combination (='basionym' in botany) is: Sardinops sagax (Jenyns, 1842; Clupea)
this is also "quite neat", and it also means that you don't have to fiddle with gender changes, if original and current genus are of different gender ...

The simplest answer to why the species name changes is because species names are constructed according to binomial nomenclature, while genera and above are not (therefore a genus name does not change when it moves families, etc.). So the question could be re-phrased as, what is the value of binomial nomenclature for species (and trinomials, etc. for infraspecies? Answer is possibly 2-fold: (1) it indicates the preferred taxonomic placement of the species (in a manner that does not exist for genera and above), and (2) it limits the number of unique epithets which have to exist in order to "label" 2m+ taxa (potentially 10m+ or more when all described or maybe 100m+ according to whom you believe), which in itself is definitely a practical advantage.
To answer your question about reconciling all subsequent placements of a species in different genera back together so that all relevant information can be retrieved, that could best be done by citing the basionym (original combination) for every species binomen but is rarely done: for example "Sardinops sagax (Clupea sagax Jenyns, 1842)" instead of "Sardinops sagax (Jenyns, 1842)" would be quite neat. Or even if there were a single source of the information in this form so users could look it up (e.g. in Catalogue of Life, hint hint) as needed...
